A Treasury of Recipes

Golden Syrup (or Jam) Sponge Pudding

This traditional steamed sponge pudding is great winter comfort food. In our recipe we make use of the Microwave to speed up the cooking process.

4 oz butter or margarine
4 oz sugar
2 eggs
4 oz flour
1 level tsp baking powder
1 tbsp warm water
4 tbsp Lyles Golden Syrup (or Jam)

Cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then fold in the flour, baking powder, and water. Line a 1 ½  pint  (4 cup) pudding basin (or glass mixing bowl) with plastic cooking wrap and place the syrup in the bottom. Heat the syrup in the microwave on HIGH for 30 seconds. Pour the sponge mixture over the syrup and cover the basin with plastic wrap. Cook on HIGH for 5 to 6 minutes and then allow it to stand for 5 minutes. Turn out onto a serving plate and serve with the traditional hot custard. Alternatively use whipped cream or vanilla ice cream.
